Lemon Berry loaf
makes 1 loaf or double recipe and bake as a bundt cake
You will need
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup sugar
1/4 cup olive oil
2 eggs
1/4 cup sour cream
1/4 cup milk
2 teaspoons lemon juice
1 teaspoon lemon zest
1 1/2 cups fresh or fozen blueberries or blackberries
Preheat oven to 350 degrees. Spray a loaf pan with cooking spray and set aside. In a mixing bowl whisk together the flour, baking powder, salt, and sugar. Add oil, eggs, sour cream, milk, lemon juice, and zest and mix. Stir in berries having care to not turn the batter purple. Spoon the batter into the loaf pan and bake for 1 hour. A toothpick should come out clean when inserted into center. Cool and top with Lemon glaze. Refregerate between serving.
