Fried Chicken ala air fryer

Finding a food way to prepare chicken for a hubby with diet restrictions was a trial until I experimented with my air fryer.

We don't eat a lot of meat but now and then I will make chicken and everyone's favorite way to have it prepared is to bread it and fry it. But I hate deep frying things in hot oil. It's messy and it's unhealthy as the process adds a lot of fat and calories. After musing over the issue I decided to experiment with my air fryer.

For this recipe you need to make a spice mix

KFC Knockoff Spice Recipe

A generous measure of this tasty spice mix will jazz up even the dullest chicken dishes.

You will need:

1/2 teaspoon Basil

1 teaspoon Celery salt

1 teaspoon Dried mustard

2 teaspoons Garlic salt

1 teaspoon ground Ginger

1/2 teaspoon Oregano

4 teaspoons Paprika

1 teaspoon Pepper

1/2 teaspoon Thyme

1 teaspoon salt

Measure spices into a jar. Fix on the lid and roll the jar in your hands to mix.

Rinse and cut chicken pieces. Then set out a bowl of milk. Put 1 cup of flour in a bag and mix in 1/4 cup of the spice mix. Then dunk each piece of chicken in the milk and drop into flour mixture. Close the bag and shake until chicken is coated.

Next pour a bit of olive oil onto a plate and roll each chicken piece in the oil until it is coated. You can drop it back into your flour bag again if you have any leftover.

Set the air fryer to 390 and preheat for 4 minutes. Fill the basket in a single layer and cook. Small piece will take 16 minutes - large pieces 20 minutes. Cook until meat is tender and white inside. Serve with ketchup or ranch dressing.
