Chocolate Loaf recipe





I was up at the farmhouse without a car and craving a chocolaty sweet, so I looked at the ingredients on hand and came up with this lovely loaf recipe. I used a gluten free flour to flour replacement, and it worked beautifully.





You will need:

1/2 cup cocoa

2 cups flour or flour replacement

3/4 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 eggs

1 cup milk

1/4 cup coffee

1/2 cup olive oil

1 1/2 cups chocolate chips, divided

Preheat the oven to 350F. Grease an 8 x 4 loaf tin. In a mixing bowl, stir together the cocoa, flour, sugar, baking powder, baking soda, and salt. Make a well at the center and add the eggs, milk, coffee, and olive oil.






Stir to make a thick cake-like batter. If the batter is too thick, add a spoon or 2 of water and mix. Spoon half of the batter into the pan and add half of the chocolate chips. Cover chips with remaining batter and top with remaining chips.





Bake at 350 50 to 55 minutes or until a toothpick inserted into the center comes out clean.
